This is another kitchen knife I've retrofit this afternoon to serve my needs.
As with the "Chef's Knife",I've fabricated a custom stainless handle that puts the balance point BEHIND THE BOLSTER.
The santoku design is particularly effective with tomatoes. Those hollow ground dimples really make the blade slide through unimpeded...The short fat handle is designed to be wrapped with only three fingers as I always rest my forefinger forward of the bolster against the blade.
Blade is 6 3/4inches long.
Handle is 4 inches.

You make knives, too?? I've never had a really good knife in my life and really wish I could afford one like this, along with a wooden holder of some kind to keep it in.
Btw, where I work, we have knives with grooves in the blade, and I love them for cutting butter because they don't stick as much as the smooth blades.
